Bacon Wrapped Pecan Apples (SCD, GAPS, Paleo, Meat)

So I can't take total credit for this recipe. My friend Alanna always raves about Bacon Wrapped Dates. Seriously they come up in conversation a lot. However, I don't tolerate dried fruit very well, including dates, so I wanted to come up with my own "Erin Friendly" version and this is what resulted. They are good. Like really good. But isn't everything that involves bacon? I mean really. It's addicting stuff.

I do recommend getting bacon made from free range pigs fed without antibiotics or hormones and made without nitrates or sugar. I get mine at my local Community Natural Foods. Yes it is a lot more expensive than traditional grocery store bacon, but in my opinion the extra cost is well worth it! Not just for your own health but for the health and wellbeing of the animals. Happy animals equals happy meat.

I can't believe the weekend is almost over. Boo! I have more night shifts this week. Another boo! My inner clock has definitely been confused these last few weeks with all the random night shifts I have had. My poor adrenal glands have no idea what to do with themselves I am sure!

Ok enough of my whining. I know you don't come here to listen to me complain. You come here to eat! So let's do that....

Bacon Wrapped Pecan Apples (SCD, GAPS, Paleo, Meat)

Ingredients

1 package nitrate free bacon (mine had 12 slices in it)
2 organic apples of choice (I used fuji) 
Ground cinnamon
Pecan butter (preferably homemade with soaked and dehydrated pecans) (almond butter or any other nut butter would also do) 

Directions

1. Preheat oven to 350 F 
2. Peel your apples and cut into slices (each apple should yield 6 pieces) 
3. Sprinkle cinnamon onto apple slices
4. Cover one side of each apple slice with pecan butter
5. Wrap pecan butter covered apple slices with bacon slices and secure with toothpick
6. Place on baking sheet and cook in the oven for 30-40 minutes or until bacon is desired crispness (my bacon was fairly thick so I cooked mine for 40 minutes) 
7. Take out of oven, let cool for a few minutes and enjoy! Try not to eat the whole batch! 


I realize the pecan butter looks rather disgusting but don't let appearances fool you! 



These are super easy to make! But be warned they disappear quickly!

SImple Roasted Chicken (SCD, GAPS, Paleo, Poultry)

So my friends this is a very very easy recipe! I feel bad even calling it a recipe, but for lack of a better word that's what I will call it!
I tend to make a roast chicken almost weekly because it is just that simple and the leftovers last for days.

I was out with a couple friends the other day and they asked me "how do you have time to make all the food that you do?"
I had never really thought about "making time" to cook, it's just something that I do. A lot! Don't get me wrong, it is time consuming making all my own food. But it is such a habit now that I don't even think of it as extra work. It's just part of my routine. And no I don't make food everyday. I tend to cook in batches. I make a lot of food on the weekends that I am not working and then 2-3 nights a week I will make a couple things each night that will last me for my meals the rest of the week. This becomes more challenging the months that I have a lot of in house call and don't see my home for days at a time, but again it just requires a little planning. On those months my post call days will be filled with cooking or baking that will last me for a few days. Then the cycle repeats.
I also have a lot of "go to meals" that I make a lot. This chicken is one of those meals. I will try to post more of my standbys, but they are usually pretty simple so I didn't really feel they were blog worthy... But let me know what you think about this one and I can post some very simple meals in the future.

Alright enough rambling! Time to cook us a chicken!

Simple Roasted Chicken (SCD, GAPS, Paleo, Poultry)


Ingredients

1 whole chicken (antibiotic, hormone free and locally raised if possible)
~ 3 tbsp organic or grassfed butter
Simply Organic Italian seasoning (if you aren't on the SCD diet any Italian seasoning will do, but if you are worried about hidden starch I only recommend this brand) 
Dried basil
Paprika


Directions

1. Remove chicken from packing and place in large baking dish (I use a metal one, but glass also works)
2. Place butter in microwave safe dish and microwave for 20-25 seconds on high
3. With your fingers spread melted butter over entire chicken, coating outside
4. Cover chicken with your spices
5. Preheat oven to 350 F
6. Place chicken in oven
7. Bake uncovered for 45 minutes and then cover with tinfoil and cook for another 30 minutes (the cooking time will vary slightly with the size of your chicken... the bigger the chicken the longer you will need) 
8. Enjoy! 


(I know it looks like a lot of paprika... but trust me it tastes good!) 




Seriously easy! The worst part of this is waiting for the chicken to cook! And don't throw out your chicken bones! Keep them to make your chicken broth.

You want to know an easy way to tell if your chicken is fully cooked? Feel how mobile the legs are. If they move around easily you are done! If they are still stiff then you need to keep cooking! Yep just a little tid bit from me to you.

Butternut Squash and Apple Puree (SCD, GAPS, Paleo)

So it's no secret that I love squash. I know I have mentioned it a few times on the blog already but I don't think I have posted any recipes with it yet! That must change. Starting now.
This recipe can be used as a side dish and is especially good with salmon or pork (in my personal opinion). Or if you are like me you can eat it plain right out of the bowl. Yep I do that.

Butternut Squash and Apple Puree (SCD, GAPS, Paleo)


Ingredients

1 medium-large butternut squash (or 2 small ones)
2 apples of choice (I used one Gala and one Golden Delicious since that's what I had on hand)
1 medium onion
2 TBSP ghee, butter or coconut oil
2 tsp cinnamon
sea salt and pepper to taste 

Directions

1. Peel squash, cut in half and de-seed. Then chop into cubes (or you can buy already cubed squash at Costco) 
2. Place frying pan on medium heat, add fat of choice and let melt
3. Add squash to frying pan and start to cook
4. While squash is cooking peel your apples and chop into small cubes
5. Stir squash every few minutes to prevent sticking and once it is slightly soft add your apples
6. Cook apples and squash for a few minutes until apples start to soften
7. Chop onion while apples and squash are cooking, and add to pan once apples are slightly soft
8. Add cinnamon, salt and pepper to ingredients and stir every few minutes
9. Once onions are clear remove pan from heat and allow to cool for a few minutes
10. Blend entire mixture together with a Immersion Blender or in your food processor to your desired consistency (I like it well pureed personally) 
11. Enjoy in whatever form you choose!

Healing Bone Broth (SCD, GAPS, Paleo)

One of the mainstays of both the SCD and GAPS diet is broth made from animal bones.
When I first started the SCD diet the broth seemed like a lot of extra work (in addition to learning how to make my own yogurt, eliminating most of my staple foods...) so I never bothered to make it. I just did the intro diet without it. And don't get me wrong, I did have good results. But recently I have been doing more and more reading about the healing powers of broth and traditionally raised meats. Because of this I recently started making the broth that I had for so long ignored. Now it's only been a couple weeks so it's probably too early for me to be seeing a real difference but I swear I feel better!

Here is a passage from the GAPS website explaining a little about the reasoning behind the broth:

"Meat and fish stocks provide building blocks for the rapidly growing cells of the gut lining and they have a soothing effect on any areas of inflammation in the gut.  That is why they aid digestion and have been known for centuries as healing folk remedies for the digestive tract.  Do not use commercially available soup stock granules or bullion cubes, they are highly processed and are full of detrimental ingredients.  Chicken stock is particularly gentle on the stomach and is very good to start from.  To make good meat stock you need joints, bones, a piece of meat on the bone, a whole chicken, giblets from chicken, goose or duck, whole pigeons, pheasants or other inexpensive meats.  It is essential to use bones and joints, as they provide the healing substances, not so much the muscle meats" (source)

Now I have lent my SCD book to a friend so I can't quote the passage that explains more about the broth in that book, but when I get it back I will give you that info as well!

Making the broth is actually really easy! Here is what I do:

Healing Broth (GAPS, SCD, Paleo) 

Ingredients

3 soup bones (From grassfed, ethically raised animals)
Filtered water
2 TBSP apple cider vinegar
Hand full of bay leaves
Sea salt
Black Pepper 
Ginger

Directions

1. Fill your slow cooker with the bones and filtered water (fill near the brim) and turn on to high heat
2. Add apple cider vinegar and bay leaves
3. Add sea salt, pepper and grated ginger to taste
4. Allow broth to cook for 3-4 hours and then turn down to low heat
5. After 8-12 hours you may begin to consume the broth
6. Leave the broth on low heat for 2-3 days, each time you take some out simply add back in more filtered water 
7. After 2-3 days place the broth in the fridge, or keep some in the freezer for a later date

Notes:
* The apple cider vinegar is crucial to help leach minerals from the bones
** These spices are what I prefer, feel free to substitute with other herbs and spices to your liking 
*** Any animal bones will do. But they should be from pasture raised, grass fed animals. If you use conventionally raised animal bones you will be ingesting poor quality nutrients and will not have the same beneficial results. Beef bones are easiest to find commercially but if you roast your own organic chickens then you have your own source of chicken bones

Isn't that easy? I don't know why I avoided it for so long. It actually find myself craving this broth now which is probably a sign my body likes it.

Disturbing Food Facts

So I read an article today that today disgusted me. I will post the link below for you all to read but first I will give you a little background.
Now I have known for a while that our food supply is filled with additives/ ingredients that don't belong in them. A few examples:

1. Vinegar made with corn derivates
2. "Natural ingredients" meaning something made with soy
3. Meat containing antibiotics and hormones
4. Farmed fish fed corn products so that the amount of omega 3 is greatly decreased
5. Produce sprayed with pesticides and grown with genetically modified seeds

You get the idea... and I am sure you can think of many more examples.



Now I have mentioned before that the SCD diet only allows honey as a sweetener so it fits that I tend to use a lot of the stuff. Well this article has totally changed the way I will be buying honey. I will give you the bottom line: The "honey" you are buying in those little teddy bears, or any other bottle for that matter likely isn't honey. It is likely corn syrup from China that has passed through Europe, been re-labelled and then brought over the border to be sold on our shelves.  Now the article focuses on American products so I am not sure if the products we have in Canada have the same problem, but I am not willing to take any risks. I will no longer be purchasing honey that is not locally produced. Period.
It disturbs me so much that the food industry would go out of their way to lie to consumers to make more money. This isn't a case of just mis-labelling a product. The product doesn't actually contain what it says it does. This is unacceptable if you ask me.

Ok rant over. For now...

Five Favourites

Again I am sorry for not blogging more regularly right now. I just finished my elective at Stanford and I am now in Florida for a well deserved vacation! I will try to post some recipes while I am here but for now you are getting a non-recipe post. Sorry.

So I know we all have our favorite foods. Those items that just make you happy the moment it hits your mouth. I feel like my favorites do change from time to time but there are a few standbys that I just love.

Five Favourites 


1. Tea

Anyone who knows me know that I like tea. A lot. I have at least 3 cups a day. Everyday (well ok sometimes I miss 1 or 2 cups but generally 3 is the rule). My current favorites are Chai Guarana from David's Tea, Earl Grey and Peppermint. Does everyone know David's Tea? I first discovered them when I was in Quebec City this year for a conference. Well let me just say it was a very dangerous discovery for me. But one that makes me a very happy girl indeed!

2. Carrot Cake

If you hadn't guessed this one from my birthday post well now you know. I love carrot cake. Like love. I have for a long long time so when I changed my diet I was determined to make an "Erin friendly" version of this one. I have made a few adjustments over the years but I have found a recipe that I love. I make this whenever there is an occasion that requires a cake that is safe for me to eat. It does require a little work (mostly grating the carrots and apple) but the end result is well worth it if you ask me.

3. Soda Water and Lime

This one probably sounds odd but I love the refreshing taste of lime in soda water. Yum! I pretty much have at least one glass of this everyday. And when I don't I crave it. That's probably a bad sign. But I don't care.

4. Squash

I could live on squash. It wouldn't be healthy but it would be delicious! The only downside... it turns your hands a lovely orange hue. Trust me it's not very attractive. I have had attendings comment on the color of my hands in the past so I have been trying to eat this a little more sparingly. It's hard! My favorites are butternut and buttercup, but really any kind will do. I usually just bake it in the oven but frying squash with onions is super delicious if you haven't tried it! My mouth is watering just thinking about it.

5. Baked apples

This is one thing that I am currently loving! I have been cooking apples with a little cinnamon and adding some butter when they are done. So good! It's like pie... just minus the crust. And let's be honest, sometimes a pie crust just requires too much work! This has been my go to dessert for the last few weeks while I have been away from home on my elective.
