Sweet Apple and Rosemary Slow Cooker Pork Leg Roast (SCD, Paleo, GAPS, Pork)


As much as I love meat I have to say it just does not photograph as well as desserts do. It's annoying! It's one of the reasons why I don't post meat dishes as often as sweets. Sorry team. So please don't judge this recipe by its pictures. It is delicious I swear! And since it is a slow cooker dish it is also super easy. I have always loved topping pork dishes with applesauce and so this recipe is an extension of that.

I am currently enjoying a very nice "staycation" away from the hospital. I have been busy catching up on life tasks. Not the funnest way to spend a week off I have to admit but after a month of ICU it is definitely necessary. I have also been visiting with friends that I haven't been able to see in the last little while which is very nice. And of course I have been catching up on the TV shows that I have missed the last few weeks. I have about a months worth of Ellen to watch. It's beautiful. And since it has been raining all week I don't feel at all guilty about hibernating inside.

It is also my boyfriend's birthday today. He's turning 29. Yep he is officially old, which makes me feel old by extension. Some days I wish I was 16 again. Life was so much simpler back then. But then I think about being back in high school with all its drama and I realize being an adult isn't so bad.
Anyways please help me wish my other half a very happy birthday. He is the guinea pig for most of the recipes that end up on here, so without him this blog might not exist. It's a tough job, but someone has to do it!

Ingredients 

1 pork leg roast (3.5-4lbs) (ideally ethically raised, soy, antibiotic and hormone free)
2 cups organic or homemade apple sauce
2 cups bone broth
1 cup water
1/2 cup white wine
2 TBSP dried rosemary
1/2 tsp garam marsala
1/4 tsp sea salt
Optional: 2-3 TBSP honey or maple syrup


Directions

1. Rinse and pat dry your pork roast
2. Place all the ingredients into your slow cooker and turn to high heat
3. Cook on high for 4-5 hours
4. Serve and enjoy!
NOTE: This recipe yields quite a bit of sauce which I love, but if you want less simply leave out the cup of water

Ginger Cookies with Coconut Cream Icing: Guest Post (SCD, GAPS, Paleo)



Today I am pleased to announce that I am guest posting over at The Real Food Guide! Vivian was kind enough to let me share this delicious cookie recipe with her readers.

This cookie recipe always receives great reviews when I make it for friends (whether they have restricted diets or not). It is SCD, GAPS and Paleo friendly, and should meet the needs of many different dietary restrictions. The mix of spices in these cookies gives them a unique flavour that will have you asking for more than one!

These cookies are filled with ground ginger, which besides tasting great, has many different health benefits including fighting inflammation, aiding digestions and stimulating the circulatory system. It also has very strong antimicrobial properties and can be used to help heal sores and wounds.  Ginger is recommended to help with many different health problems including digestive issues, arthritis, headaches, morning sickness, motion sickness, nausea, muscle pain and cardiovascular disorders. Yes this little herb has very powerful effects and I recommend that many of my patients take some form of ginger on a daily basis. These cookies are an easy and delicious way to add a dose of ginger to your daily routine!

Weekly Recipe Wrap-up

Hi everyone! How is your week going?

I have some great news… only one more ICU call shift left in my medical career!!! This is a very big deal. It not only represents the end of my in house call days it also means I am one step closer to starting my rheumatology fellowship in July! I can't wait!

Needless to say since I am on ICU I haven't had as much time for blog related activities. Or anything else outside of medicine for that matter. But I have still managed to collect some amazing looking recipes for this weeks recipe wrap up. It is a little dessert heavy. I apologize for that (well no, actually I don't… a little extra paleo dessert never hurt anyone).

Since you have found your way here I know you already believe in the positive health effects that a paleo or ancestral type diet can have, but this is still far from a widespread belief which makes me very happy to see USATODAY publishing an article about the paleo diet.

Paleo Spiced Banana Bread "Oatmeal" (Paleo, SCD, GAPS, Breakfast)



Hi everyone! How has your long weekend been? Have you done anything exciting? I sure hope so! I know a lot of people camp on the May long weekend. I have to say that I don't really understand the appeal of camping anymore. Now don't me wrong, back in the day when I was young and exciting I used to really love camping. Now I just think of the cold, mud, gross bathrooms, uncomfortable bed and less than ideal food and I cringe inside. Is anyone else with me? I sound like such an old woman I know.

My weekend was pretty uneventful I have to say (that's what working does to a long weekend). Although I did go look at a house on Saturday. Man houses are expensive here in Calgary. Yikes! It was nice though. Very nice. Sigh. Somedays I dream about what winning the lottery might be like… never having to think about the cost of things like houses… Yes a girl can dream. This dream won't ever become a reality since I never actually buy lottery tickets. Ok that's a lie. I have bought one once… and clearly I didn't win. What a waste of five dollars if you ask me. Do any of you buy lottery tickets? What would you do if you won?

I have another "oatmeal" recipe for you today. Yes I am on a roll with these lately! This one tastes similar to the banana bread I grew up eating. But is (of course) grain and refined sugar free. I hope you like it! If you missed my original oatmeal recipe you can see it here. It has become one of the most popular recipes on the blog so I feel good saying that I think you will like it! 




Ingredients

3 ripe bananas
1/2 cup coconut milk
1/3 cup coconut cream concentrate or coconut butter (buy here
1 tsp organic vanilla extract  
1/2 tsp ground organic cinnamon
1/4 tsp ground cloves (I use this brand)
1/4 tsp allspice (I suggest this brand
1/4 tsp nutmeg (I use this one)
pinch sea salt
Optional: 2 TBSP maple syrup or honey (avoid if not using added sweeteners)

3/4 cup finely shredded coconut (I use this brand


Directions

1. Break the bananas up into pieces and place in a medium saucepan on low heat on the stove
2. Add the remaining ingredients, except the shredded coconut to the pot
3. Allow the ingredients to come to a low boil and cook for about 10-12 minutes, stirring intermittently, until the bananas are broken up
4. Add the shredded coconut and stir well to combine
5. Remove the saucepan from the heat and cover with the lid and allow the "oatmeal" to sit for 5-10 minutes to soften the shredded coconut
6. Serve and enjoy!
You can top this with berries, coconut flakes, nut butter or nuts

Paleo Beef Stroganoff (Beef, Paleo, GAPS, SCD)



Hi friends! How is your week going? I can't believe it is Thursday already! Time flies when you are busy working. And it's almost the long weekend! Do you have any fun plans? I will be working so nothing exciting planned for me… I will just have to live vicariously through all of you.

So the boyfriend and I finished Season 2 of House of Cards last week. So good! Do any of you watch it? If not you definitely should. I won't give any of it away here since that would just be evil. But it is good. Really good! But now we have a problem…. we have nothing to watch!
Do you have any recommendations? I am open to anything!

I have a delicious recipe for you today. This paleo version of Beef Stroganoff tastes so good that my mother did not realize this was not her normal recipe!
I know I am creating high expectations for this one. Hopefully you like it as much as we did!
I paired this with some cooked broccoli and cauliflower and it was delicious. It would also be great with cauliflower rice, sweet potato noodles or squash.

Enjoy!




Ingredients 

2 lbs grassfed top sirloin beef steak (cut into pieces)
3 TBSP grassfed butter or ghee (or coconut oil)
1/4 tsp ground mustard
1/4 tsp sea salt

1 medium onion, diced
5 cups chopped mushrooms
2 cloves garlic, minced
2 TBSP organic dijon mustard

1 cup bone broth
1 can full fat coconut milk
1/2 cup red wine
3 TBSP coconut flour


Directions

1. Turn electric frying pan onto 250F 
2. Add butter, ground mustard, sea salt and beef to pan and brown beef by cooking for 1-2 minutes per side  
3. Once beef is browned, add onions, garlic, mushrooms and dijon mustard and cook for a few minutes (until onions start to turn clear)
4. Add remaining ingredients and simmer for another 20-30 minutes until the sauce achieves the thickness you like

Weekly Recipe Wrap-up

Happy Weekend everyone! This week went by rather quickly I have to admit. Being on call for ICU every second day can have that effect. But I am off for the weekend which is pretty nice. I don't really have a lot planned… catch up on sleep, cook, study… yep I sure do know how to have fun!
It will just be nice to be away from the hospital for a little bit. Especially ICU. I know some people thrive in the ICU type environment but it is just not for me. I am not an adrenaline junkie and running codes, putting lines into patients and dealing with ventilators is not my idea of fun medicine. Good thing I am going into rheumatology…

Chocolate Raspberry "Ice Cream" with Gelatin (Paleo, No Added Sweetener, GAPS)




Do you miss ice cream since going paleo and removing dairy from your diet?? Well if you do here is an alternative that has a texture very similar to ice cream. And not an ounce of dairy involved. Now that the weather is finally starting to warm up this would make a great after dinner treat.

I don't have a lot to say today unfortunately. I just worked a 28 hour shift so my brain is not functionally at top capacity. Oh the joys of ICU. Technically they aren't supposed to keep us longer than 26 hours, but they tend to ignore the rules in ICU. There are just so many perks to being a resident.

Have any of you ever worked for more than 24 hours? How do you feel after? I know most of us residents have a "post-call ritual" that we all partake in. Mine usually involves a quick nap (3-4 hours), a good meal, a workout and then an early bed time. Maybe some studying squeezed in there if I have time. Yep there is some real craziness happening over here. But only 5 more ICU call shifts left in my career! Can you tell I am counting down?

Ok I think that is enough ICU rambling for one blog post. Here's the recipe you are waiting for! Enjoy


Ingredients

2 ripe bananas
2 cups raspberries (fresh or frozen both work)
1 cup coconut butter or cream or concentrate (Buy here or here
1/4 cup cacao butter (found here
1 TBSP organic vanilla extract (found here
pinch sea salt 
3 TBSP organic cocoa powder 
2 tsp grassfed gelatin (I use this brand)
Optional: 2 TBSP honey or maple syrup (I don't think this recipe needs it, but if you want it slightly sweeter this is a good addition) 


Directions

1. Place a medium pot on low heat on the stove
2. Add the bananas, raspberries, coconut butter, cacao butter, vanilla and sea salt and allow to melt together, stirring frequently until everything is melted together and the lumps are removed
3. Add the cocoa powder and stir until combined
4. Add the gelatin and stir until combined and the gelatin has dissolved 
5. Remove from heat, pour into a large bowl and place in the freezer
6. Freeze for 1.5 to 2 hours, stirring every 30-45 minutes until you have the consistency you desire
7. Serve and enjoy!
NOTE: If you freeze it for too long and it gets completely hard, simply place on the counter at room temperature and allow to thaw for 30-60 minutes.
NOTE: Store this in the fridge once you are satisfied with the texture. It keeps well in the fridge for days (if it lasts that long)
